Pulled Chicken Avocado Sliders

Ingredients

  • 1 tablespoon Oil
  • 1 pound Vidalia Onions, thinly sliced
  • 1 pound rotisserie chicken breast, shredded
  • 1 tablespoon Taco Seasoning
  • 1 teaspoon minced Garlic
  • ¼ cup Chicken Broth
  • 2 medium Avocados, smashed
  • 8 Whole Wheat Slider Buns
  • pinch of Salt and Pepper

Directions

In large skillet, heat oil over medium-low heat. Place onions in pan and sauté slowly until caramelized, stirring several times over 30-35 minutes. Season onions lightly with salt and pepper. Combine shredded chicken, taco seasoning, garlic and chicken broth in a bowl and mix until incorporated. Assemble the sliders with chicken and onions and top with mashed avocado.
