Skinnytaste Dinner Plan (Week 50). Wow! We have now been doing the weekly meal plans for almost a year! I hope everyone finds them helpful and takes advantage of them! So it seems the holiday countdown is officially underway, an advertisement on the radio today said there are only six (6) weekends left before Christmas!!!!!!!! I don’t know about you but that put me into a bit of a panic mode! Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. We’re a family of four, so if a recipe serves more, it’s either packed up for everyone’s lunch or eaten the next day as leftovers. Monday: Butternut Squash and Black Bean Enchiladas
Tuesday: Skillet Chicken in Tomato-Chipotle Sauce with Avocado Crema with brown rice
Wednesday: Oven “Fried” Breaded Pork Chops with Raw Shredded Brussels Sprouts with Lemon and Oil
Thursday: Turkey Meatball Stroganoff (Instant Pot, Slow Cooker or Stove Top) with noodles
Friday: Baked Buffalo Chicken Nuggets with house salad
Saturday: Dinner Out
Sunday: Beef, Tomato and Acini de Pepe Soup
