Edamame & Cranberry Salad

Ingredients

  • 2 cups frozen shelled edamame
  • 1 cup dried cranberries, sweetened
  • 1 tablespoon extra virgin olive oil
  • Black pepper, to taste
  • 1 cup crumbled feta cheese

Directions

  1. Defrost edamame in microwave and allow to cool completely.
  2. Toss edamame and cranberries together with olive oil and pepper until combined.
  3. Gently stir in the feta cheese.
  4. Refrigerate until ready to serve.
