In anticipation of the double-whammy of Cinco de Mayo and Mother’s Day, I present to you this super easy Mexican-inspired chicken taco recipe. Busy mamas will appreciate that this dump-it-in-and-forget-it recipe tastes exponentially better than the effort expended. Better yet, it’s so simple that your kitchen-challenged partner or kids can make it for you while you relax in front of the boob tube. Personally, I don’t always have the desire or energy to cook dinner, and my favorite meal is the one someone else cooks for me. Might as well make dinner prep easy on everyone, and just throw everything into an Instant Pot!

I’ve included directions for using either boneless and skinless breasts or thighs. I’m a thigh girl myself, but I tested and photographed this pressure cooker recipe using breasts—one of my least favorite cuts—because I know that many of you prefer it to chicken thighs. (See how much I love you guys? You’re welcome, chicken breast lovers!) I still recommend using chicken thighs in this recipe ’cause breasts can easily overcook in a pressure cooker if you don’t remove the chicken right away.

Final note before we get started: my kiddos love using Siete Foods’ grain-free tortillas to wrap their tacos, but feel free to substitute lettuce leaves if you’re going old-skool Paleo or low-carb. You can also enjoy the savory chicken in omelets, or topped on salad greens. OlĂ©!

Arrange the chicken in a single layer in your pressure cooker.

Sprinkle the seasoning on both sides of the chicken, making sure to rearrange the pieces in a single layer on the bottom.

Pour the salsa evenly over the chicken pieces.

If you’re using an Instant Pot, press the “Manual” button and the “—” button until the “30” on the display decreases to 7 minutes for chicken breasts and 10 minutes for thighs. (For those of you using a stovetop pressure cooker, lock the lid and crank the heat to high to bring the contents to high pressure. Once high pressure is reached, reduce the heat to low, or just enough to maintain high pressure. Set a timer for 6 minutes for breasts and 9 minutes for thighs.) 

When the chicken is finished cooking, immediately release the pressure manually. To deal with all the released steam, I normally move my Instant Pot to position it below the stovetop exhaust vent before I turn the valve, or I throw a kitchen towel on top.

Remove the lid right away…

…and transfer the chicken to a bowl to prevent overcooking.

Use two forks to shred the chicken. Taste the cooking liquid and adjust with salt and pepper if necessary.

Pour the cooking liquid on top of the chicken…

…and toss well to coat.

Serve on top of your favorite grain-free tortillas or on lettuce wraps. Garnish with your favorite taco toppings and dig in!

How To Train Effectively And Run Races Confidently

Running is not just taking off on the road if you plan to do it as a regular exercise or your idea of a total workout to stay fit, but usually running ends up in marathons and races as a sense of fulfillment – your pot of gold at the end of a rainbow.

For starters, it is best to plan your running program with regards to distance and endurance, which must be carefully planned out so that your goals are more realizable than planning to do a cross country run and end up not finishing it at all.

Take it in stride. If you have started with your first 3-kilometer run, take pride in yourself and aim for the 5K. Once you are done with your 5K then start aiming for the 10K and so on.

Whatever you do, never train blindly. Experts suggest that you stick to a running program to help you finish your program and see wonderful results from your efforts.

Try to follow this 12-week training program designed by running experts. You aim for a goal of running your 10-minute mile race and get to do it without injuring yourself.

First things first, if you can muster running 3 to 5 miles without feeling any pain, then you can start off with this routine that includes speed work and tempo, guaranteed to pay off bigtime come race day.

For the first few days, try running a 2 mile distance with a time of 12:05 minute per mile pace. Having a good prep workout will help you get to muster up the endurance and speed like CrossFit, pilates, swimming, biking or rowing- all except running.

Do a short run but slightly lower than race pacing and jog between intervals for recovery.

For speed workouts, run four miles total, warm up for a mile then follow up with three repetitions of 800 meters in 4 minutes and 40 seconds, jog 400 meters and after the third rep jog to cool down for a mile.

For the tempo run, run for four miles, first mile for your warm up, then run two miles a at a pace of 10:26 minute mile. Cool down for another mile.

Alternate your easy, speed and tempo runs but make sure to take rest days during your second, fifth and seventh day of each week to allow your muscles to recover and body to take good rests in between the training process.
