Cubed Steak with Peppers and Olives (Instant Pot, Slow Cooker and Stove-Top)

Cubed Steak with Peppers and Olives (Instant Pot, Slow Cooker and Stove-Top)

Braised Cubed Steak with Peppers, Onions and Olives is a flavorful, budget-friendly and family friendly dish you can make in the Instant Pot, Slow Cooker or in a pot on the stove.

This is a dish I grew up eating, and always loved. It’s cheap because it’s made with an inexpensive cut of beef and just a few ingredients. My Mom learned this recipe from her Cuban friend which she called Carne Machacada. I saw the cubed steak in the supermarket last week and craved this dish immediately so I called my mom to ask her how to make it and adapted it for the pressure cooker. She makes this on the stove which I have done many times before, but really loved how tender it came out in the Instant Pot.

My family devoured this, even went back for seconds. I served it over rice with a quick slaw on the side. If you want an easy, budget-friendly, family-friendly dish with a Latin flair, I’m sure your family will enjoy it!

Asparagus Egg and Bacon Salad with Dijon Vinaigrette is the perfect easy Spring salad made with just a few simple ingredients – asparagus, hard boiled egg and bacon tossed with a Dijon vinaigrette.

This is one of my go-to salads this time of year. Asparagus and eggs are a match made in heaven, but not just for breakfast, it’s great for lunch too! I always keep hard boiled eggs on hand in my fridge to use throughout the week, therefore this salad came together in less than 10 minutes.

A few more reasons to love this salad:

  • It’s perfect to pack for lunch on the go
  • Can easily be made a head for meal prep, you can keep it refrigerated 4 to 5 days.
  • Multiply the recipe to bring it to a potluck
  • Eating seasonal means it’s inexpensive to make
  • Perfect for low-carb diets, gluten-free and Paleo diets

Being a Fit Bottomed Girl means trying out all the latest gear including wearables that track your fitness. A common question we get from readers is which tracker is best for their personal needs. In case you are wondering — yes, I got quite few quizzical looks. This was especially true after teaching my classes where my students demanded I show the results from each one. My …

Skinnytaste Dinner Plan (Week 69)

Skinnytaste Dinner Plan (Week 69)

I’m away in Austin for a few days returning on Tuesday night, so I prepared Picadillo or the family for the next two days. My family loves it, and leftovers are great. Check it out as well as some other meals I have on the menu for the week!

Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. We’re a family of four, so if a recipe serves more, it’s either packed up for everyone’s lunch or eaten the next day as leftovers. If you would like to see some of the previous week’s dinner plans, click here

Skinnytaste Dinner Plan (Week 69)

Monday: Cuban Picadillo with brown rice
Tuesday: Leftover Cuban Picadillo for tacos
Wednesday: Pickle-Brined Baked Chicken Tenders and Loaded Cauliflower Mash Bake
Thursday: Chicken Soup with Spinach and Whole Wheat Acini di Pepe
Friday: Cajun Shrimp in Foil
Saturday: Dinner Out
Sunday: Turkey Meatball Stroganoff (Instant Pot, Slow Cooker or Stove Top) with noodles
